This is my favourite Elephant Garlic from over 50 unregistered cultivars I have collected over eight years. In fact it is the ONLY one I’ve kept – because all else paled by comparison.
This has a true genuine garlic flavour of medium intensity with no pasty or green aftertaste. Can produce a very large bulb (over 750gm) – but best to keep it down to 200-300gm.
Keep out of sun to prevent “greening” of the clove tissue.
Grown right throughout Australia
Plant in mid-March to mid-May.
In hotter climates – like Queensland and Northern NSW – it is better to plant between mid-February to early March so they harvest before high temperatures in Spring.
